Ingredients
- 4 endives.
- 3 tablespoons of extra virgin olive oil.
- 1 tablespoon of apple cider vinegar.
- 1 tablespoon of soy or tamari.
- 1 Greek yogurt.
- 40 grams of blue cheese.
- Toppings: crunchy almonds, laminated almonds, crushed 100% wholemeal bread spikes and sautéed with a little extra virgin olive oil.
Let's cook
- Cut the endives in half crosswise.
- Prepare the mixture of extra virgin olive oil, vinegar and soy/tamari and distribute it over each endive.
- Take to the air fryer 10 minutes at 200ºC.
- After the time has elapsed, add 3 tablespoons of water above each endive and cook again for 10 minutes at 180ºC.
- Meanwhile, beat the yogurt with the blue cheese.
- When they are ready, remove the endives with the help of tweezers and place them in a bowl.
- Add the mixture of yogurt and blue cheese on top and sprinkle with the topping that you like the most.
