  • 1 onion.
  • 2 garlic cloves.
  • 750 ml of vegetable broth.

  • Salt and pepper to taste.
  • Extra virgin olive oil.
  • Pumpkin seeds for garnish.

Instructions:

  1. Peel and chop the pumpkin, onion, and garlic.
  2. In a Cuking Heavy cast iron cocotte, sauté the onion and garlic with a splash of olive oil until golden.
  3. Add the pumpkin, curry, salt, and pepper, and mix well.
  4. Incorporate the vegetable broth and let it cook over medium heat for 20-25 minutes.
  5. Blend the mixture until smooth with the Mixy blender. Add the cream and cook for 5 more minutes.

2. Beef Wellington

Ingredients:

  • 1 pork or beef tenderloin (approximately 500 g).
  • 1 sheet of puff pastry.
  • 250 g of fresh mushrooms.
  • 2 garlic cloves.
  • 100 g of serrano ham.
  • 1 egg.
  • Salt and pepper to taste.
  • Olive oil.

Instructions:

  1. Preheat the oven to 200 °C.
  2. Season the tenderloin with salt and pepper and sear it in the Yummy raclette for a perfect seal. Set aside.
  3. Chop the mushrooms and garlic, and sauté them in the raclette until all the water is gone.
  4. Place the slices of serrano ham, mushroom sauté, and tenderloin on the puff pastry sheet.
  5. Wrap everything with the puff pastry, sealing the edges well. Brush with beaten egg to make it golden.
  6. Bake for 25-30 minutes or until the puff pastry is golden.
  7. Let it rest for a few minutes before cutting. Spectacular and elegant!

3. Cheese and Nougat Tart

Ingredients:

  • 200 g of Maria-type cookies.
  • 100 g of butter.
  • 250 g of cream cheese.
  • 200 ml of heavy cream.
  • 150 g of Jijona nougat.
  • 6 sheets of gelatin.
  • 50 g of sugar.

Instructions:

  1. Crush the cookies with the Spiro hand blender and mix them with the melted butter. Spread this mixture in a removable mold to create the base and refrigerate.
  2. Soak the gelatin sheets in cold water.
  3. Heat the cream in a pot and dissolve the drained gelatin in it.
  4. Crush the nougat along with the cream cheese and sugar until you get a homogeneous mixture.
  5. Add the cream and gelatin mixture to the nougat, mixing well.
  6. Pour the mixture over the cookie base and refrigerate for at least 4 hours.
  7. Decorate with pieces of nougat before serving. A dessert that tastes like Christmas!
