Vegan Crispy Spring Rolls
Ingredients to make 8 rolls
- 8 vegan brick dough sheets
- 1 onion
- 1 eggplant
- 6-7 portobello mushrooms
- 5-6 cherry tomatoes
- 40 gr of textured soy
- Salt, pepper and olive oil
Leave the textured soybeans to soak for 20 minutes. Meanwhile, start preparing the filling . Cut the onion and aubergine into strips, and the mushrooms and cherry tomato into small cubes.
Sauté all the ingredients in a pan over low heat. To make the poaching better, cut and include the ingredients in the following order : onion, eggplant, tomato and mushrooms.
When the soybean is textured, include it in the poaching. Add salt and pepper to taste and at the end of the poaching, let it cool.
Fill the brick sheets with the poaching. So that the rolls are well sealed, spread the edges with olive oil. The last step will be to put the rolls in the air fryer with a little olive oil and cook for 5 minutes at 180ºC.

If you have leftover poached, it can be kept perfectly in the fridge to make more rolls whenever you want.
Vegan assortment of vegetables and greens
Ingredients for 1 serving
- 1/5 broccoli
- 1/5 potato
- 2 wild asparagus
- 1 baby carrot
- 5 ears of corn (minis)
- 1/5 purple onion
- 1 small yellow bell pepper
- 1 handful of sesame seeds
Slice and steam all ingredients except the yellow bell pepper. While the ingredients steam, dice the yellow pepper.
Let the ingredients cool down once boiled. Next, put all the boiled ingredients in the air fryer along with the yellow bell pepper and a handful of sesame seeds. Add a splash of olive oil and salt to the mixture.
The last step will be to cook the assortment in the air fryer manually or by selecting its corresponding menu.
Vegan Wild-Style Stuffed Eggplants
Ingredients to fill 1 eggplant
- 1 eggplant
- 2 piquillo peppers
- 10 chicken strips (Heura)
- 20 grams of wild rice
- 20 grams of chickpeas
- 1 handful of raisins
- olive oil and salt
Boil the chickpeas and rice to taste. Meanwhile, cut the aubergine in half and cut the inside into strips.
Fill the aubergine with all the ingredients (except the raisins): the aubergine, the piquillo peppers, the rice, the chickpeas and the chicken strips. Add olive oil and salt to the filling and place the aubergines in the air fryer . Program manually or by selecting its corresponding menu.
The last step will be to put the aubergines on a plate and add the raisins on top, and... enjoy!
