These, apart from providing you with a healthy and delicious diet, will prevent you from leaving the kitchen in a mess and wasting time!
Crispy Vegan Spring Rolls
Ingredients to make 8 rolls
- 8 vegan brick pastry sheets
- 1 onion
- 1 eggplant
- 6-7 portobello mushrooms
- 5-6 cherry tomatoes
- 40 gr of textured soy
- Salt, pepper, and olive oil
Soak the textured soy for 20 minutes. Meanwhile, start preparing the filling. Cut the onion and eggplant into strips, and the mushrooms and cherry tomato into small cubes.
Sauté all the ingredients in a pan over low heat. For better sautéing, cut and include the ingredients in the following order: onion, eggplant, tomato, and mushrooms.
When the soy is textured, include it in the sauté. Add salt and pepper to taste, and once the sauté is finished, let it cool.
Fill the brick pastry sheets with the sauté. To ensure the rolls are well sealed, brush the edges with olive oil. The last step will be to place the rolls in the air fryer with a little olive oil and cook for 5 minutes at 180°C.
Enjoy the crispy rolls!
If you have leftover sauté, you can store it perfectly in the fridge to make more rolls whenever you want.
Vegan Assortment of Vegetables
Ingredients for 1 serving
- 1/5 broccoli
- 1/5 potato
- 2 green asparagus
- 1 mini carrot
- 5 mini corn cobs
- 1/5 red onion
- 1 small yellow pepper
- A handful of sesame seeds
Cut and steam all the ingredients except the yellow pepper. While the ingredients steam, cut the yellow pepper into cubes.
Allow the ingredients to cool once boiled. Next, place all the boiled ingredients in the air fryer along with the yellow pepper and a handful of sesame seeds. Add a splash of olive oil and salt to the mixture.
The last step will be to cook the assortment in the air fryer manually or by selecting its corresponding menu.
Vegan Stuffed Eggplants Wild Style
Ingredients to fill 1 eggplant
- 1 eggplant
- 2 piquillo peppers
- 10 strips of chicken (Heura)
- 20 grams of wild rice
- 20 grams of chickpeas
- 1 handful of raisins
- Olive oil and salt
Boil the chickpeas and rice to taste. Meanwhile, cut the eggplant in half and hollow out its interior into strips.
Stuff the eggplant with all the ingredients (except the raisins): the eggplant, the piquillo peppers, the rice, the chickpeas, and the chicken strips. Add olive oil and salt to the filling and place the eggplants in the air fryer. Set manually or by selecting its corresponding menu.
The last step will be to place the eggplants on a plate and add the raisins on top, and... enjoy!
