Creamy rice with sirloin and mushrooms

Ingredients
  • 250 gr of pump rice
  • 200 gr of varied mushrooms
  • 400 gr of pork sirloin
  • 1 onion
  • 2 garlic cloves
  • 2 crushed tomatoes
  • 1 sweet paprika cdta
  • 1 glass of Pedro Ximenez
  • 2 Tomillo twigs
  • Saffron (infusion)
  • 1 liter of meat broth
  • Pepper
  • Chive
  • Almond alioli
  • Aove
  • Salt

Arroz meloso de solomillo y setas
Let's cook
  1. We salt and pepper the sirloin and mark it in a pot with Aove, take it out and reserve it.
  2. We do the same with mushrooms, saute and reserve.
  3. In the same oil and juices we poach the onion very minced, then add the garlic, the sweet paprika and the crushed tomato, we fry.
  4. We add Pedro Ximenez, thyme and reduce.
  5. We add the sirloin and mix everything, put the broth and when the infusion of saffron boils (below it details how it is done).
  6. At this point we put the rice, we go around and cook about 16/17 minutes, in recent we put the mushrooms and let stand for about 5 minutes.

    We serve with chives and almond alioli. Enjoy.

    Saffron infusion:
    100 mg of saffron powder + 25 ml of water at 65 degrees, infusion and voila.

    Almond Alioli:
    Like the basic but with crushed almonds.
