Ingredients
- 2 round courgettes or moon courgettes.
- 1 handful of cherry tomatoes.
- 1 fresh mozzarella or other cheese that melts well.
- Sea salt.
- Pistachios or granulated almonds.
- Prepared from: extra virgin olive oil, Provencal herbs, a pinch of sea salt.
Let's cook
- Wash the courgettes and make a cut in the upper part (leaving a lid).
- Wash and cut the cherry tomatoes, cut the mozzarella and add it to the courgette container.
- Add salt to taste and stir well.
- Add the preparation of extra virgin olive oil, Provencal herbs and sea salt on top (add 2 tablespoons of this preparation for each courgette).
- Cook 14 minutes at 180ºC.
- Carefully remove and sprinkle almond or pistachio granules before serving.
