Zucchini stuffed with tomato and cheese

Ingredients

  • 2 round courgettes or moon courgettes.
  • 1 handful of cherry tomatoes.
  • 1 fresh mozzarella or other cheese that melts well.
  • Sea salt.
  • Pistachios or granulated almonds.
  • Prepared from: extra virgin olive oil, Provencal herbs, a pinch of sea salt.

Calabacín relleno de tomate y queso

Let's cook

  1. Wash the courgettes and make a cut in the upper part (leaving a lid).
  2. Wash and cut the cherry tomatoes, cut the mozzarella and add it to the courgette container.
  3. Add salt to taste and stir well.
  4. Add the preparation of extra virgin olive oil, Provencal herbs and sea salt on top (add 2 tablespoons of this preparation for each courgette).
  5. Cook 14 minutes at 180ºC.
  6. Carefully remove and sprinkle almond or pistachio granules before serving.
