Ingredientes
- 1/2 zucchini.
- 1/2 large red pepper.
- 1 small sweet onion.
- 1/2 eggplant.
- Sprouts or mix of lettuce.
- 70-80 grams of feta cheese
- A handful of pistachios.
for the sauce
- Extra virgin olive oil.
- Apple vinager.
- Sea salt.
- Provencal herbs.
A cocinar
- Cut the vegetables into small squares, place them in a container suitable for the air fryer and add olive oil to taste and salt. Stir well to integrate.
- Cook 20 minutes at 180ºC.
- Let cool.
- Prepare the vinaigrette in an airtight glass jar and shake well.
- In a salad bowl, add the sprouts or mesclun to the base, then the already warm vegetables, the feta cheese, the pistachios and finally the vinaigrette.
