
Roasted vegetable salad, feta cheese, and pistachios
Ingredients
- 1/2 zucchini.
- 1/2 large red pepper.
- 1 small sweet onion.
- 1/2 eggplant.
- Shoots or lettuce mix.
- 70-80 gr. of feta cheese.
- A handful of pistachios.
for the sauce
- Extra virgin olive oil.
- Apple vinager.
- Sea salt.
- Provencal herbs.

Let's cook
- Cut the vegetables into squares, place them in a suitable container for the air fryer and add olive oil to taste and salt. Remove well to integrate.
- Cook 20 minutes at 180ºC.
- Let temper.
- Prepare the vinaigrette in a hermetic glass boat and stir well.
- In a salad bowl add the outbreaks or mix at the base, then the tempered vegetables, the feta cheese, the pistachios and finally the vinaigrette.
