False risotto with zucchini, gorgonzola, and walnuts
Ingredients
- 160 g of Orzo (paste in rice grains)
- 400 ml of vegetable broth (or water)
- 1 zucchini
- 1 onion
- 100 g of gorgonzola
- 100 g of grated parmesan
- Nuts to taste
Let's cook
- This is a “One Pot” recipe: everything is done in the same pan. So you're going to get very little dirty!
- Cut the vegetables to cubes (onion and zucchini) and fry with a splash of olive oil in the pan.
- After 10-15 minutes, when the vegetables are well poached, add the Orzo.
- Go adding the broth or water, little by little, and mixing. The pasta will absorb all the liquid. Cook for 10 minutes.
- After this time, the pasta must be almost to the point. It will be time to turn off the fire and incorporate the cheeses.
- Add the Gorgonzola and the Parmesan and mix until completely integrated.
- Serve the false risotto accompanied by chopped nuts.
