Ingredients
  • 160 g of Orzo (paste in rice grains)
  • 400 ml of vegetable broth (or water)
  • 1 zucchini
  • 1 onion
  • 100 g of gorgonzola
  • 100 g of grated parmesan
  • Nuts to taste

  1. This is a “One Pot” recipe: everything is done in the same pan. So you're going to get very little dirty!
  2. Cut the vegetables to cubes (onion and zucchini) and fry with a splash of olive oil in the pan.
  3. After 10-15 minutes, when the vegetables are well poached, add the Orzo.
  4. Go adding the broth or water, little by little, and mixing. The pasta will absorb all the liquid. Cook for 10 minutes.
  5. After this time, the pasta must be almost to the point. It will be time to turn off the fire and incorporate the cheeses.
  6. Add the Gorgonzola and the Parmesan and mix until completely integrated.
  7. Serve the false risotto accompanied by chopped nuts.
