Ingredients
- 160 g of orzo (pasta in the form of grains of rice)
- 400 ml vegetable broth (or water)
- 1 zucchini
- 1 onion
- 100g gorgonzola
- 100g grated Parmesan
- walnuts to taste
Let's cook
- This is a "one pot" recipe: everything is done in the same pan. So you will make a very little mess!
- Cut the vegetables into cubes (onion and courgette) and fry in a pan with a drizzle of olive oil.
- After about 10-15 minutes, when the vegetables are well poached, add the orzo.
- Go adding the broth or water, little by little, and mix. The paste will absorb all the liquid. Cook for 10 minutes.
- After this time, the pasta should be almost ready. It will be time to turn off the heat and add the cheeses.
- Add the gorgonzola and parmesan and mix until fully integrated.
- Serve the false risotto accompanied by chopped nuts.
