
Bravas potatoes with healthy aioli
Ingredients
- 4 medium potatoes
- 5 garlic cloves
- 150 g of Skyr (or natural Greek yogurt)
- 3 grated tomatoes or a can of natural tomato
- 1 bug or chilli
- Extra virgin olive oil
- Salt and pepper

Let's cook
- Wash the potatoes and cut them to small cubes. It is not necessary to peel them. The skin gives a rustic touch and its flavor is very rich.
- Cook the potatoes in a saucepan with boiling water and abundant salt for 8 minutes.
- After this time, drain well and put them in the air fryer. Add two tablespoons of Aove.
- Add the four whole garlic cloves and with skin, along with the potatoes.
- Cook the potatoes and garlic in the air fryer, 12 minutes to 190ºC or until they are well golden.
- For healthy alioli: Remove the garlic from the air fryer and peel them. Chafar them until you get a paste. Mix the cooked garlic with the Skyr, a spoonful of Aove and a pinch of salt. If you like to have an acidity point, you can also add a few drops of lemon. And voila!
- For tomato sauce: In a pan saute the grated tomato with a couple of spoonfuls of Aove, rolled garlic and a bug. Cook for about 20-30 minutes. Serve the freshly made potatoes with a little tomato sauce on top and the healthy alioli crowning the dish.
