Ingredients
  • Vegetables to taste (in this case, eggplant, zucchini, mushrooms, red pepper and cherry tomatoes).
for the sauce
  • 2 tablespoons of tamarind paste.
  • 2 tablespoons of fish sauce.
  • 1, 5 tablespoons of brown sugar or panela.
  • 2 teaspoons of soy or tamari.
  • 2 tablespoons of peanut butter.

Let's cook
  1. Wash and cut the vegetables into pieces and add them to the fryer accessory “skewer rack”. In case you do not have the accessories, you can use chopsticks.
  2. Take the skewers to the air fryer, spray extra virgin olive oil on the skewers and cook for 20-25 minutes at 160ºC.
  3. Meanwhile prepare the sauce. Add all the ingredients to a saucepan and cook over low heat until it has the consistency of a sauce.
  4. Carefully remove the skewers and add the sauce on top.
