Ingredients
- Vegetables to taste (in this case, eggplant, zucchini, mushrooms, red pepper and cherry tomatoes).
for the sauce
- 2 tablespoons of tamarind paste.
- 2 tablespoons of fish sauce.
- 1, 5 tablespoons of brown sugar or panela.
- 2 teaspoons of soy or tamari.
- 2 tablespoons of peanut butter.
Let's cook
- Wash and cut the vegetables into pieces and add them to the fryer accessory “skewer rack”. In case you do not have the accessories, you can use chopsticks.
- Take the skewers to the air fryer, spray extra virgin olive oil on the skewers and cook for 20-25 minutes at 160ºC.
- Meanwhile prepare the sauce. Add all the ingredients to a saucepan and cook over low heat until it has the consistency of a sauce.
- Carefully remove the skewers and add the sauce on top.
