Vegetable skewers with Thai sauce
Ingredients
- Vegetables to taste (in this case, eggplant, zucchini, mushrooms, red pepper and cherry tomatoes).
for the sauce
- 2 tablespoons of tamarind paste.
- 2 tablespoons of fish sauce.
- 1, 5 tablespoons of brown sugar or panela.
- 2 teaspoons of soy or tamari.
- 2 tablespoons of peanut butter.
Let's cook
- Wash and cut the vegetables and add them in the frying accessory "Brill for skewers". In case of not having accessories, you can use sticks.
- Take the skewers to the air fryer, spray extra virgin olive oil on skewers and cook for 20-25 minutes at 160ºC.
- Meanwhile prepare the sauce. Add all the ingredients to a saucepan and cook over low heat until you have a sauce consistency.
- Carefully remove the skewers and add the sauce above.
