The montadito is a small sandwich served in many areas of Spain, especially in Andalusia, where the tradition dates back no less than to the 15th and 16th centuries. At that time, it was customary to 'mount' sausages and other basic products on bread.

Gourmet montaditos of loin and Dijon mustard

The loin montadito is one of the great classics. Of course, it is very important to accompany it with ingredients that best match the loin so that the result is truly gourmet. We will give you a great recipe.

Ingredients:

  • Small sandwich bread.
  • 1 loin steak per montadito.
  • 1 slice of bacon.
  • Dijon mustard.
  • Mayonnaise (optional).
  • 1 red pepper per person.
  • Extra virgin olive oil.
  • Salt.
  • Pepper.

Preparation:

1. The first thing you need to do is open the sandwich and toast it in our toaster Crispy.

2. Put a little extra virgin olive oil in the pan and fry the slice of bacon until it is well toasted. If you want, you can replace the bacon with smoked palometa or serrano ham. In the same oil, fry the  loin steaks previously seasoned with salt and pepper. Reserve the oil.

3. Now, add more oil to the pan to fry the peppers that have been previously opened and with a little salt.

4. It's time to assemble the sandwich. Add a little of the oil in which you fried the loin and the bacon. Spread it on both halves of the bread so that the oil covers the entire sandwich well.

5. Add the loin spread with Dijon mustard to taste (with the bacon on top) and finally, the fried pepper. Is Dijon mustard too strong for you? Mix it with a bit of homemade mayonnaise to lighten the flavor.

Guacamole, chicken, and tomato sandwich

If you're a lover of guacamole, you'll be surprised by a different and very tasty way to have it. Don't like chicken? You can swap it for turkey or even make your vegetarian version with white cheese or breaded and fried tofu.

Ingredients:

  • Small sandwich bread.
  • One chicken breast per person.
  • Homemade guacamole.
  • A few slices of tomato.
  • A white onion.
  • Curry or any other spice to marinate.
  • Extra virgin olive oil.

Preparation method:

1. To start,  marinate the chicken breasts with curry (or another spice you like such as oregano, moruna, or paprika) and add extra virgin olive oil on top. Let the contents marinate for a good while to absorb the flavor. If you want, you can leave it marinated in the fridge the night before to achieve an intense flavor.

2. Meanwhile, make the guacamole. For a restaurant-quality result, blend it in a professional blender like the Spiro from Mellerware. Put the avocado, onion, and tomato in pieces, and add a few drops of Tabasco and salt. Blend with the TURBO power, until you achieve a compact cream. 

3. Now, spread the sandwich bread with guacamole and add the chicken breast, tomato slices, and some rings of white onion.

Salmon sandwich with Burgos cheese and arugula

If you want a healthy sandwich or you're not a big fan of meat, this salmon one will delight you. Additionally, you can swap the salmon for pomfret or smoked cod (the result is just as delicious). And if you don't like arugula, replace it with lamb's lettuce or fresh spinach.

Ingredients:

  • Small sandwich bread.
  • One slice of smoked salmon per person.
  • Burgos cheese or fresh cheese.
  • Fresh arugula.
  • Extra virgin olive oil.
  • Balsamic vinegar or lemon (optional).
  • Salt.
  • Pepper.

Preparation method:

1. Open the sandwich bread and toast it in a toaster like the Crispy or try doing it in an air fryer like the Crunchy

2. Add the smoked salmon, the Burgos cheese in slices and, finally, the arugula previously dressed with oil, salt, and a few drops of lemon or balsamic vinegar (the latter only if you like it).

3. Your montadito is ready. To accompany it,  serve it with a tomato and black olive salad. Dress to taste and it's ready.
